About the Author

Dennis Laumann is associate professor of history at the University of Memphis. The author of the forthcoming Remembering the Germans in Ghana and other publications on West African history, Laumann received his doctorate from UCLA in 1999. He is president of the Ghana Studies Association and a Fulbright Scholar. He also is the recipient of numerous teaching honors, including the Thomas W. Briggs Foundation's Excellence in Teaching Award.

Highly recommended book!

I highly recommend this book to individuals who have no prior knowledge about Africa or colonialism. It's easy to follow and very insightful. Dennis Laumann writes very well, it's very clear, and concise, yet to the point and impactful. Another thing I enjoy is how he takes on an African perspective, even though he is an American, so it's also a very compassionate and heartwrenching account of Africa's colonial history. It's also a short book, which I could complete in two settings. But it left me curious about the continent and wanting to find out more!

About the Author
Brought up in Fife, William Curley's career began with an apprenticeship at Gleneagles, followed by 6 years at numerous Michelin-starred establishments, working with respected chefs including Pierre Koffman at La Tante Claire, Raymond Blanc at Le Manoir aux Quata Saisons and Marco Pierre White at The Restaurant. He then became Chef Patissier at The Savoy Hotel under Anton Edelman, as Chief Patissier leading a team of 21 pastry chefs. In 2004, he opened his first boutique in Richmond, followed by the opening of his equally successful Belgravia Boutique. After an increasing demand for his chocolate and patisserie creations, William Curley chocolate and patisserie concessions were opened in world-renowned department store Harrods in July 2011. They also create bespoke patisserie to accompany Afternoon Teas at some of London's top establishments. William has been awarded Britain's Best Chocolatier by the Academy of Chocolate four times (2007-2011) and has won numerous other awards. Most recently William became a member of the prestigious Relais Desserts, an association of the top pastry chefs across the world who come together to promote haute patisserie. Couture Chocolate, William's first book, won the Guild of Food Writers Cookery Book of the Year award in 2012.Suzue Curley completes the team with an equally impressive patisserie background. Born in Japan, Suzue was influenced and inspired by many Japanese patissiers but recognized that she needed to move to Europe to complete her training. She met William while working as a patissier at The Savoy, having previously trained at Claridge's and Le Cordon Bleu.

How I wish I could give this book a higher rating!

First off let me just say that this book is gorgeous! I own dozens of cookbooks and baking books but not one of them can rival this one. The photography is amazing - for those who like photos in their cookbooks (and who doesn't?), this book is a must. I honestly cannot get enough of flipping through it and just enjoying the photographs of all the delectable creations.

The pastries presented are truly breathtaking. William Curley is clearly a master of his craft and we are fortunate that he decided to share his knowledge with us in this tome. In my opinion, this is a fantastic book for the price (as compared to, for example Stephane Glacier's "Tarts, Gouters, Entremets" or Pierre Herme's "ph10" each of which cost well over three times the price of this book). If you want to get a taste for the kinds of recipes this book offers check out Youtube for the author's presentation of a Strawberry and Pistachio Breton Tart. These are truly innovative, creative patisserie pieces, some of them are just plain showstoppers. And the wonderful thing is that the author breaks down each creation in discreet and digestible chunks even though at first glance they seem to be completely out of reach for a home baker. The first part of the book includes basic recipes for sponges, meringues, creams, sauces, etc. after which follow recipes broken down into Pastries and Leavened Specialties, Petits Gateaux, Entremets (my favorite), Macarons, Verrines, Baked Cakes, and Petits Fours.

Most recipes have multiple photos showing individual steps and the recipe includes numbers that allow for cross-referencing each step to the photos. The ingredients and cross-references to basic recipes are very clearly set out and each recipe lists specialized equipments/forms needed. Most recipes have a little blurb about the history of the recipe or some other interesting information. The instructions and photos for chocolate decorations are incredibly detailed - almost as good as watching a video. Though this book is clearly not for the novice baker, the presentation allows anyone who can follow instructions and is willing to spend the time (and invest in some specialized equipment and forms) to recreate the fantastic creations in the book.

NOW FOR THE BAD PART and the only reason I give this book less than five stars. There are errors in the recipes. In some recipes specific steps are left out (e.g. in the cannele recipe, there are no instructions for what to do with the hot milk mixture - it is never referenced again after it is taken off the stove). The conversions from grams to cups/spoons are wrong all over the place (60 grams of cocoa powder is not 4 tbsp, it's more like 1/2 cup). Because professional pastry chefs use weights I would err on the side of using the weight measurements and ignore the cups/spoons but even the weight measurements are wrong in some places. For example, in the genoise recipe, the amount of dry ingredients called for is double what is typical for the amount of eggs specified (300g flour, 300g sugar and 125g butter for 6 eggs). I cross referenced at least 5 other baking books I own as well as the internet and it seems clear that for this amount of eggs you should use about half the other ingredients specified. I ran into a similar error with the author's other book, Couture Chocolate, when making the pistachio joconde, where the amount of sugar specified was clearly wrong.

Some (maybe even most) recipes are fine but you really have to tread carefully with this book and you need to have a sense for correct proportions of ingredients or better yet cross reference against other sources. Having said that, I think the book is still incredibly valuable and unparalleled in its class. I just hope that the author or the publisher releases an errata sheet to make it more reliable.

UPDATE: Having now used this book for a few years I stick with my original review. I use it mostly for the foundational recipes (creams, mousses, purees, cake layers) and also decoration ideas and I have not encountered any issues with those. The step by step photos and instructions are so useful! A few pictures of the things I made are attached (black current and chocolate dessert, chocolate and praline mousse cake, and a cake loosely based on the Fraisier).

Incomplete and incorrect recipe(s)?

So the recipe for the Cannelés caught my eye and I've been working with it for the past few days. I am a Pastry Chef and I tinker with recipes all the time. Add an extra egg, remove some flour, DEFINITELY remove some sugar...I'm used to recipes not working when I do this because even though I know that baking is a science...I know one day I'll hit on something amazing.

It doesn't help though when the recipe in a book that's been published and ostensibly proof read by editors numerous times, is incomplete and just wrong.

Ignoring the fact that the author completely misses telling us to temper the hot liquid into the eggs....it's left on the stove somewhere never to be integrated, the entire recipe calls for (375ml (13fl oz/1 2/3 cup) full-fat milk.

In the recipe it states to first add 250ml (8 1/2 fl oz/ generous 2 cups) with the remaining amount being added later. So 250ml is 2 cups but 375ml is only 1 2/3 cups. And we're to add a partial amount that's more then the stated whole amount needed for the recipe. Which is correct?

I don't want to assume that all the recipes are wrong. But I also don't want to waste my time and money trying recipes that don't work and not knowing if it's me or the recipe. Guess I'll have to find out the hard way.

About the Author

Roy A. Cook, D.B.A. (Mississippi State University), brings extensive real-world insights to this text. His industry and consulting experiences have spanned over twenty years of service to the hospitality industry. He has held positions ranging from controller and food and beverage manager at the property level to internal auditor and human resource director at the corporate level with organizations such as Hyatt Hotels and Adam's Mark Hotels. He has written and published numerous articles, cases, and papers based on his extensive experience in services industries. Dr. Cook is currently Assistant Dean of the School of Business Administration at Fort Lewis College, Durango, Colorado and serves as Director of the Colorado Center for Tourism Research®.

Laura J. (Richardson) Yale, Ph.D., holds B.S. and M.S. degrees in Hotel, Restaurant, and Travel Administration from the University of Massachusetts at Amherst. Subsequent to experience in the restaurant, institutional food service, and entertainment industries, Dr. Yale began teaching at Northern Arizona University. While in Arizona, she was instrumental in developing and directing a regional tourism association and served on the Governor's Intrastate Tourism Committee. She received her Ph.D. in Marketing from the University of California-Irvine. Dr. Yale is recently retired from Fort Lewis College, after years of teaching courses and conducting research in Tourism and Resort Management and Services Marketing and Management. She now devotes herself full-time to writing and traveling.

Joseph "Jay" Marqua has degrees from the Culinary Institute of America and Fort Lewis College. He is a hospitality and services executive with 20 years experience in operations; finance; and organizational design and development of food and beverage, lodging, resort, and gaming entertainment properties. He currently serves as the managing partner for The Tourism and Hospitality Development Group. The client list for his company has included organizations such as Amtrak, Aramark, the Culinary Institute of America, GWC Gaming, The Sky Ute Lodge and Casino, and SunRay Park and Casino. Mr. Marqua remains an active consultant, speaker, and trainer for hospitality organizations.

Preface

The tourism industry is both dynamic and diverse. Most students come to the study of tourism full of enthusiasm and questions. Yet, the textbooks available have been dry and/or overly focused on travel agencies and transportation modes. Often they are full of facts with little theoretical or macro-issue discussion. As a result, students' enthusiasm soon wanes and their interest in careers in "tourism" diminishes. We decided to write a book that would be as interesting and multifaceted as the field itself.

Like the first edition, the second edition of Tourism: The Business of Travel features a conversational style, making it fun to read,-yet providing a thorough overview of the tourism industry, giving balanced coverage to each component part. The role of the travel agent and the importance of transportation modes are included, but not to the omission of significant coverage of other industry issues, such as accommodations, destinations, attractions, and food and beverage operations.

As our title suggests, we look at the tourism industry through the lens of business, specifically by considering the management, marketing, and finance issues most important to industry members. In addition, the book starts with a comprehensive model of tourism and unfolds by considering each piece of the model in succession. All students should find the book enjoyable and educational, no matter which facet of the industry they find most interesting.

ENHANCEMENTS IN THE SECOND EDITION

We have built on the success of the first edition of Tourism: The Business of Travel and created an even better learning tool in the second edition. We kept and expanded all the features that readers and reviewers said they liked and added topics about which they said they wanted to know more. The impacts of technology on the industry have been integrated throughout the text. Several important improvements are featured in this second edition and in the Instructor's Manual. We designed this second edition of Tourism: The Business of Travel so that it can be tailored to suit a variety of needs. Its engaging writing style and its hundreds of updated industry examples make it the perfect textbook for freshman and sophomore students taking their first tourism class. The thoroughness of content also makes it suitable for a similar course introducing students to the hospitality industry. To meet the advanced critical-thinking needs of junior and senior students, we have augmented the text's basic content with end-of-chapter readings and comprehensive cases that they can use to apply their knowledge and refine their problem-solving skills.

No matter how experienced the instructor or students, we believe this second edition is one that professors can teach with, not simply from. The various text features and teaching supplements allow each instructor to develop the course to fit his or her style and the special needs and learning styles of students.

HOW THE TEXT IS ORGANIZED

The second edition of Tourism: The Business of Travel introduces students to an integrative model of tourism as a dynamic industry and then unfolds, considering each of the model's components in turn. The first part focuses on the traveling public and tourism promoters, explaining the critical linking role that travel agents and tour wholesalers provide. Part 2 familiarizes students with each of the tourism service providers in turn, beginning with transportation and concluding with destinations and resorts. Part 3, The Service and Hospitality Environment, elevates students' attention to macro-issues facing the industry, including service quality and the important impacts that tourism can have on host communities and the world.

Each chapter of the book is followed by a supplementary reading(s). Three practical applications appendices are included to increase students' transferable skills. The text concludes with six integrative real-world cases that professors can use during the course as it unfolds or at the end of the course to bring all the pieces together.

Feature: Students are sensitized to the variety of impacts that tourism can have: economic, political, social, and environmental.
Feature: Three appendixes build student skills in problem-solving, good manners, and career/job-seeking.
Feature: Readings follow each chapter, offering the instructor supplemental material and examples for student discussion.
Feature: The text concludes with six integrative cases that have been classroom tested and can be used to give students practice in applying what they have learned and improving their problem-solving/critical-thinking skills.

THE INSTRUCTOR'S TOOLKIT

To fulfill our goal of making this second edition of Tourism: The Business of Travel customizable for individual instructor needs, we have developed a comprehensive instructor's toolkit of resources. The instructor's manual includes the usual elements—detailed chapter outlines and a testbank—but also includes supplemental lecture material and discussion guides to support the use of the readings and cases provided in the text. In addition, discussion suggestions are offered throughout the chapter outlines to generate student debate on several of the textbook features, such as the You Decide chapter dilemmas.

The power of the written word in our text is also supported by a series of videos and a website that both students and professors will find educational and entertaining.

Easy Reading and Great Information

Everything you always wanted to know about the tourism industry in one convenient source! This book is written with the serious reader in mind, but it's easy reading style will appeal to any curious mind. It covers everything from operating issues to fun facts that will help you be a more informed consumer. Once you pick it up, you won't want to put it down.

This book contains the most current and comprehensive coverage tourism industry on the market today. I enjoyed reading this book due to the excellent writing style of the authors. It is very well organized so finding topics of interest was no problem. It lists many citations to other sources and is well researched. The author's educational credentials and other accomplishments are listed (and are very impressive.) Cook and Yale have done extensive research and publishing in tourism. I find this work very credible and user-friendly. I know that I won't leave home without it!

About the Author
S. Marc Breedlove, the Barnett Rosenberg Professor of Neuroscience at Michigan State University, has written over 100 scientific articles investigating the role of hormones in shaping the developing and adult nervous system, publishing in journals including Science, Nature, Nature Neuroscience, and the Proceedings of the National Academy of Science. He has been widely interviewed about his research by periodicals including the San Francisco Chronicle, Los Angeles Times, New York Times, and Newsweek, as well as broadcast programs such as All Things Considered, Good Morning America, and Sixty Minutes. He has active grant support from the National Institute of Neurological Disorders and Stroke, the National Institute of Mental Health, and the National Science Foundation. Dr. Breedlove is a Fellow of the American Association for the Advancement of Science and the Association for Psychological Science. Neil V. Watson is Professor of Neuroscience in the Department of Psychology, Simon Fraser University , Vancouver, Canada. He teaches biological psychology to hundreds of undergraduate and graduate students each year. Neil and the members of his lab study sex-related aspects of the structure and function of the nervous system, with ongoing grant support from the Natural Sciences and Engineering Research Council of Canada. His work on topics ranging from the effects of steroids on cell survival, to the neural control of reproductive behavior, to human cognitive sex differences has appeared in a variety of journals, including the Journal of Neuroscience, the Proceedings of the National Academy of Science, and Brain Research.

A good book, but with some poorly explained parts and a horrendous website

I have mixed feelings about this book (7th Edition). Generally, I like it and would give it a 4-star. The material was expansive and interesting, the graphical presentation excellent and informative. Two features made me downgrade it to three stars (and I'd have preferred to give it a 3 1/2 stars if Amazon let me. The problems noted below were just too frustrating.

First, the website associated with the book is truly dreadful (but could have been such a good resource). Practice exercises and exams in which "fill in the blank" entries are used are almost unworkable. They are looking for a particular word out of the book, and synonyms or plurals (even when grammatically correct) are flagged as wrong answers. The use of semicolons to separate multiple word answers will also result in answers flagged as wrong, or if the order of correct answers is mixed. As somebody who has written a lot of scripts, I must judge whomever wrote the scripts underlying these exercises to be thoroughly incompetent (have they ever heard of an OR statement or pattern matching?!). Since the text itself doesn't contain exercises, thought problems, and the like (and refers you to the website, I was left with no resource for practicing and developing my understanding.

Second, since the underlying material is such an active area of research right now, much of the material is based upon publications. Many of the descriptions of the material in the publications is watered down for presentation, and the key concepts get lost in translation. For example, the discussions of brain regions in attention (Chapter 18) ended up completely incomprehensible (lists of brain regions with descriptions that sounded all the same), forcing me to go to the referenced publication to figure out what the author was getting at. Additionally, a subset of much older publications (circa 1990s or 2000s) was used, and more recent material omitted. It's a difficult problem for the authors given the high level of research activity in the field, but the text probably needs to be updated more often to reflect recent discoveries, and update older research findings.

It's a good book, but I found myself repeatedly going back to Kandel's Principles of Neuroscience (a more advanced text) for pedagogical clarity and to fill in the gaps.

as a poor college student

I had to use this textbook for my Biopsychology course Senior year. I rented it for the semester because, as a poor college student, I wanted to cut corners. However looking back, I really regret skimping out. This book was fantastic and would greatly help my now that I am in graduate school pursuing my PhD. Really great information in a very clear manner. If you have to use it for a class you'll really enjoy it; and if you are looking for a good textbook to have around the house (to refer to or just make you look smart) this book will really do the job.

The book itself arrived in excellent condition and before my course even started, so I could go into class well prepared. There were a few bookmarks leftover from the previous user, but that didn't bother me. I had an amazing rental experience!

I mean, you have to be into this to like it. This book wasn't exactly fun to read. Informative, but that's it. I think the online website attached to this book was fun to wear because it summarized everything and was more interactive.

A tell it like it is book

This is excellent in that we had to take a good hard look at what we dreamed of doing in another part of the world..Yes the notion of living in Tuscany is very inviting..but if you are not a negotiator or have the patience to work on a project like buying or leasing from a foreign agent ..you will be very disappointed.. The book pointed out the paper work and the slow pace that they work at in Italy.. ANd we as Americans

have a tendency to demand results now..and it just doesn't work that way.

If if you had a rich relative in Italy that left you a place. I would probably take years and several translators to get the job done..It opened out eyes to situations we had not been aware of..i am so glad we bought this book..Vry honest and down to earth..covers everything...

Don't bother if you're an American!

This book is all but useless to residents of the US looking for good information about moving to Italy. The book is mostly for residents of EU countries, England most specifically. Altho there are a few items of general interest, and some mention of things pertaining to US citizens, I think it would be a waste of money for anyone who needs serious, current advice. Please note the the 2 favorable reviews are from people who are not US citizens. Save your money!

a broader context for the Romantic era

Connell takes us back to the Romantic Age, with an analysis of the key figures of that era. The emphasis in his book is on writers such as Shelley and Wordsworth. But he places them and their works squarely in the context of the political and social movements then occurring.

Thus we see descriptions of parliamentary struggles. And of the economic thoughts of Malthus, Ricardo and Smith. The musings of early industrial capitalism. Perhaps, the book seems to suggest, some of the literary figures can be understood in part as being influenced by those other ideas, and reacting to them.

Connell's synthesis is interesting, because many histories of this era might study the economists and politicians totally separately from the literary writers.
